Chicago Trip – Day 2

I think this day was by far the busiest day we had. It was all so great though. It’s just so hard to fit everything that you want to do in when you only have a few days and especially when you have never been somewhere before and you just want to do everything! I recommend all of the things we did this day! We got up super early and went until probably 1 a.m. I was exhausted by the end of the night! So worth it!

First, we went downtown by Michigan Avenue where a lot of the site seeing is. This is just me standing with a lot of the older skyscrapers in the background.

Shedd Aquarium. This was actually one of my favorite things of the trip because I love marine and “aquatic” animals. They had a lot of animals there. The dolphins swimming everywhere and they had a bunch of Beluga whales. The otters and the penquins were the cutest. They also had one of those Shark things you could walk under. I almost felt like I was back home at Sea World šŸ™‚

The BEAN! Actually this is called Cloud’s Gate, which I only knew because I read about it before hand. I always pictured it to be so shiny, which it was, but it was covered in fingerprints! I don’t know why I didn’t expect that with everyone touching it all the time. I just thought it was funny. But I have always wanted to see it and take a picture there. Check!

The Purple Pig, off of Michigan Avenue. This had to be my favorite restaurant of the trip (thanks Hailey and Courtney for telling me about this!) It’s kind of just hiding in the corner, but you have to go and eat on the patio. Ohmigoodness it was sooo good! I wanted to order everything! This is a must go!

They have a bunch of schemers (I wish I could have tried more of them); we got the cucumber and feta with bread and I downed it! Then we got the greek tuna, muscles, and artichokes. It’s kind of a tapas place, which I love because then you can get a little bit of everything. The muscles were the best I had ever tried! It seems like I’m exaggerating…I’m not. I would go there every week if I didn’t live hours away.

O and don’t worry, we stopped and got wings too…Wrigleyville (as they call it – the blocks all around the stadium) has tons of places to go hang out and eat for miles it seems. Such great food down that way also! More bar type food, pizza, and game type food, but still great. We got ten wings for like $2.00!

After the game the subway is waaaay too packed to get right on, so we decided to go hang out for a while. We went shopping for a little and then went and listened to a local band at Cubby’s. So fun!

If you go to Chicago, you have to go to a baseball game! Wrigley Field is such an amazing stadium because it’s one of the few older ones left! It’s really cool to see. Get yourself some nachos and enjoy a game!

Chicago Trip – Day 1

Back in June, we took a trip to Chicago. It was so fun! I loved Chicago! It’s like a cleaner version of New York! There was so much to do there! Shopping, museums, parks, tours, basbeall…Food! They have amaaaaazzzing food there. You could literally eat whatever you wanted all day long, every day for a year, at a new place every meal and still not get through everything you wanted. I think that might have been my favorite part. It was either crazy hot or freezing though. I never knew what to wear everyday. That’s the only part I didn’t like.

Anyway, so I’m finally around to posting about it! The first day we did the Architectural boat tour where they take you down the river and show you all of the buildings and talk about how and when they were built and tell you a little bit about the history. It was actually really fun and I highly recommend that you do this if you ever go out there. They give you snacks and drinks and you just get to ride down the river for about an hour and a half so it’s not too long. Also, the guide we had was pretty funny.

The Navy Pier was our next stop. This is where World’s Fair is. They have a bunch of food places and a bunch of rides and fun things to see. This is another stop you should do! We ate lunch here and took a ride on the ferris wheel.

View from the top of the Hancock Building. So much better than the Empire State Building, because there was not the huge line! Haha, but don’t get me wrong, because both are awesome! It was really neat to see the whole city from way up on top.

This night we didn’t have any baseball games so we went out for a fabulous steak dinner…check out how big Jake’s steak is. Chicago is known for it’s steaks. I wish I could remember the name of where we went!

We seriously walked all over the place, but it’s kind of good because we ate tons! I like walking around because you get to see so much. I was already in love with Chicago after the first day! My new favorite city!

Cucumber Lemon Water for Detox

BEST Water to Boost Weight Loss

– 2L water,Ā 1 medium cucumber, 1 lemon, 10-12 mint leaves. (can add 1 tspn of freshly grated ginger)

The idea for this lemonade came from a health/fitness/nutrition site, where it says that this drink helps maintain a flat belly.

Lemon Poppy Seed Donuts

This weekend Janell, Brit, and I were making food and decorating for our friend Jess’ baby shower. Brit has a mini donut maker, so we decided to make these the night before as a test run. I could not stop eating them…they are delicious!!! Pretty sure I ate the entire batch…ok I didn’t because we shared…but I could have. You have to try out this recipe!

Lemon Poppy Seed Donuts

Yield:Ā 24 mini donuts

Total Time:Ā 20 minutes if using electric donut baker!

Ingredients:

1/2 cup plus 1 tablespoon whole milk
2 tablespoons sour cream
1 1/2 cup all purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
6 tablespoons unsalted butter, room temperature
1/2 cup sugar
1 large egg
zest of 1 lemon
1 tablespoon poppy seeds

For the icing:
juice of 1 lemon (about 2 tablespoons)
1 1/2 cups powdered sugar

Directions:

If using electric donut maker, preheat. If using donut pans, preheat oven to 350 degrees and grease donut pans.

In a small bowl, whisk together milk and sour cream. Set aside.

In a small bowl, whisk together flour, baking powder, and salt. Set aside.

In large bowl, or stand mixer, cream together butter and sugar, until light and fluffy – about 1 minute. Add egg, lemon zest, and poppy seeds. Beat for 30 seconds, scrapping down the bowl as needed.

Then alternating flour mixture and milk mixture, combine all ingredients until just combined. Do not over mix.

Transfer batter into a piping bag, or a ziplock bag with the tip cut off.

If using mini donut pans: Fill each donut indention 1/2 full. Bake for 6-8 minutes, or until the donuts are slightly browned and spring back when touched. Remove from oven, transfer to a cooling rack, and cool completely.

If using the electric donut maker: Fill each donut indention 3/4 full. Bake according to manufactures instructions, or until the donuts are slightly browned and spring back when touched. Remove from oven, transfer to a cooling rack, and cool completely.

For the icing:
Place wax paper under a wire rack to collect drippings for an easy clean up.

In a medium bowl, whisk together the lemon juice and powdered sugar until smooth. Dip the top of each donut into the glaze and transfer to a wire rack to dry. Let set for 10 minutes and serve!

Will keep for a day or two in an airtight container, but are better fresh!

Vegas Vacation and Florence

A couple weekends ago, a few of my friends and I headed down to Vegas for a sunny getaway to see Florence and the Machine at the Cosmopolitan. Seriously one of the most fun weekends I’ve had in a while. Sun, shopping, food, and Florence. Yes please!

It was soooo hot! We had to sit in the water to lay out, but it was great. We got so tan, which was the point!Ā 

We spent a lot of time shopping…duh we were in Vegas! You have to seize the opportunity right? Just a little pic of some of my favs at Topshop.Ā 

This is what I wore to go out Friday night. A neon top and black faux leather leggings. A fun Vegas outfit if you ask me. (Top – Nordstrom, Leggings – Kohl’s, Shoes – Steven by Steve Madden, Necklace – JMR)

The Forum shops at Ceasar’s are open til 12 on weekends…so yeah…we shopped til about 12. We took a little break to eat Ā at Max Brenner’s which is one of my favorites, and then finished up and just headed back to our hotel (the Trump) because we were so tired!

Saturday we spent most of the day at the pool, shopped a bit, and got ready for the concert!

We ate at my absolute favorite place…Sushi Sambi!!!! AMAZING!!! If you go to Vegas, please make sure that this place is on your list.Ā

Main purpose of the night (and trip)…FLORENCE!!! Ohmigosh, I cannot even tell you how amazing this concert was. I have been obsessed with her for a while, but she blew me away in person. The concert was a the Cosmopolitan’s pool, and we were soooo close to her. She played so many good songs and her outfit was to die for. I am seriously in love with her. She is soooooooo good in person. I wanted to go see her again right after. Some people are not very good live, but her voice is better live, I swear. She is so genuine and just amazing. You are missing out if you don’t take the chance to attend a concert in your lifetime.Ā 

Just some shopping before heading home…after the pool of course šŸ™‚

Trump chandeliers…so pretty. (I really like staying at the Trump…it almost doesn’t feel like Vegas because there is not casino so it doesn’t have that yucky feeling.)

Cinco de Mayo Recipes

 

Ceviche Tostadas
Makes four

For the ceviche
4 grouper or red snapper fillets

Juice of 20 limes
4 serrano or jalapeno peppers, sliced
1 bunch cilantro, chopped
Salt and pepper to taste
Saltine crackers or corn tostadas

1. Slice fish sashimi style (Ā¼-inch slices, slicing from top to cutting surface).

2. Make a marinade of lime juice, peppers, cilantro, and salt and pepper.

3. Submerge fish in marinade. Let rest in the refrigerator for at least two hours.

4. Combine fish with garnish (recipe below).

5. Serve atop tostadas or with crackers as a dip.

For the garnish
1 tomato, chopped
Ā¼ onion, chopped
1 tbsp. cilantro, choppedĀ 
1 jalapeno, choppedĀ 
1 avocado, slicedĀ 
Juice of 2 limes
Salt to taste

1. Combine all ingredients in a bowl and set aside.

Aguachile
Serves four to six

Ingredients
1 lb. shrimp peeled, deveined, andĀ butterfliedĀ 
2 c. fresh squeezed lime juiceĀ 
1Ā½ English cucumbersĀ 
Ā¼ c. cilantro leaves and stemsĀ 
2-3 serrano chilies, coarsely chopped
Ā½ red onion, thinly slicedĀ 
1 avocado, slicedĀ 
1 sm. bunch of cilantro sprigs (to garnish)Ā 
Salt to taste

1. Place the shrimp in a bowl and cover with 1Ā¾ c. lime juice.

2. Toss together to submerge. Let the shrimp sit for 15 minutes until they turn pink and opaque.

3. Peel, seed, and coarsely chop one cucumber.

4. Place chopped cucumber in a blender with cilantro leaves and stems, one of the serrano chilies, and 2 tbsp. of the reserved lime juice. Add Ā½ tsp. salt and puree until smooth.

5. Add additional chilies, salt, and reserved lime juice to taste.

6. Toss sauce with the shrimp.

7. Slice the remaining Ā½ cucumber into Ā¼-inch rounds and arrange on a platter. Top with the shrimp-and-sauce blend.

8. Place the red onion and avocado on top.

9. Garnish with cilantro sprigs.

10. Serve with tortilla chips.

Roasted Jalapeno Gacamole

(serves 6)

Ingredients

2 limes, juiced

1 tsp coarse salt

Ā¼ cup chipped red onion

1 large jalapeno

2 avocados

Ā¼ cup chopped cilantro

Combine lime juice, salt, and red onion in a medium bowl and set aside. Blister jalapeno on a grill, turning frequently. Once blackened, removed from heat and let cool. Using a paring knife, completely peel and see pepper. Cut into thin strips and combine with lime juice and onion mixture.

Pit, peel, and dice avocados into medium-sized chucks. Fold chopped cilantro and avocados into the marinating onion and pepper mixture, mashing the avocados slightly for a chunky texture. Serve with tortilla chips or as a side to tacos.

Smoky Chipotle Crema

Serves six

Ingredients

1 cup sour cream

3 tbsp sauce from canned chipotle in adobo (can get at speciality food stores or the Mexican ingredient sections of most grocery stores.)

Mix ingredients together and serve as a side to tacos.

Pineapple Pico de Gallo

Serves six

Ingredients

2 cups 1/4 ā€“inch diced pineapple

4 Peppadew peppers

1 tsp Peppadew surup

Ā¼ cup chopped red onions

Juice from half a lime

1.4 tsp Ancho chili powder

Pinch coarse salt

Combine all ingredients and serve as a side to tacos or with toritlla chips.

Weekend With My Family

My mom flew up last weekend to help my find a place to live and because I’ve been really stressed out about some things going on lately, but my dad and little brother, Taylor, flew up on Wednesday night to come hang out too. They had been planning the trip for a little while for Taylor’s spring break so they could come ski and etc, but then they got roped into helping me move.
I will do a post about moving later, but long story short…Friday (a.k.a. moving day) came and my dad ended up in the ER. He had been having trouble with a kidney stone for a little bit, but while he was skiiing the day before it just got terrible. He went to the hospital on Friday morning and the pain was so bad that it was making his blood pressure so high that he could have stroked out. Anyway, my uncle works at the hospital so he was able to get my Dad into surgery that day, because he needed to be able to fly home, and we didn’t know how long it would be before it would pass. I was able to get moved and my Dad was able to come home Friday night.
On Saturday we went snowmobiling, which was super fun and I will do a post about that later too. Then my mom and I went shopping for my birthday (mostly for things for my new apartment) in the afternoon.
Later that night we met up with a bunch of my cousins, aunts, and uncles for dinner. We just went to Hires Big H (best burgers ever) so we wouldn’t have to worry about getting a reservation somewhere. It’s so fun to get together with your whole family and hear what everyone is doing.
